According to Ayurveda, every human has certain common and certain distinct properties inherently. To maintain the balance of good and bad, there should be control of what we intake. The doshas define what should or shouldn’t be consumed- both, the physical and emotional needs need to be satisfied.
One’s diet also has its inherent properties depending on the source, preparation methodology, environmental factors, etc. Ayurveda helps align the human needs (one’s svasthya) and what the food items have, to offer. This is also why the diet and nutrition course is customised for each individual and not mass-produced- to suit the needs of one’s body.
Ayurveda classifies food based on the different rasas and gunas. The qualities of the items have a direct impact on their ayurvedic importance. This type of cooking and nutrition intake is a very holistic approach to living a healthy life and also the first step towards it.

We believe that it is only through Ayurveda that one can return to their normal state of being- the original or natural state of one’s creation. This ancient pseudoscience works from the inside out. This means that the healing or the treatment has to begin from within by removing the toxic elements through herbal remedies and gradually returning to the natural state of the body’s constitution.
Ayurveda includes yoga, meditation and first and foremost, nutrition or food intake is of utmost importance. It is one’s diet that gives the body its nutrients or deprives the same. It is the only way to completely nourish the body and mind. And so, Ayurveda has always placed special emphasis on ahara and anna- diet and food respectively.
The methodologies used at Haritha Ayurveda, aim to heal the body, take care of the well-being and finally to prevent further diseases. The procedures aren’t half as complex as one would think and are perfect substitutes for raw and processed foods.
Ayurveda suggests that we must properly select food items before preparation. Factors that would ideally affect this decision are body type, source of food, environmental conditions, digestion, herbs and spices used, one’s special physical condition, etc.
The food items are unique in the nutrition they provide and different combinations have different impacts upon consumption. Since there are so many factors involved, there are innumerable combinations that may be formed and hence there is a need for analyzing what each need.
